The tasting room is kept constant at 25 ° C, each of the odor-causing molecules in The Samples , the identify in a volatile condition making it easier to during The Testing process.

Instead of the usual laboratory, beakers and test-tubes, the walls are lined covered with shelves, in glasses of wine.

Sarah Sinclair, 29, who has a Zoology degree and Greta Cepanonyte, 27, who has a biomedical science, are two of The Scientists in the laboratory.

Sarah said: "When we explain to the people about our work, you think, everything we do is drink and smell the Water , but it is much More Than that, and we are experts in the smell and taste of Water .

"I can tell the difference between the Water that comes out of my tap at home compared with The One at work or restaurants, and Bottled Water .

"I had no idea what was involved before I took this job, and I have to say I absolutely love it. "

Each glass is filled with 60 ml of each sample Water

The tasters are not to wear coats, because they do not want cross-contamination from other labs.

"We can't swallow, as we would very bloated from the amount of Water we have, for example," says Sarah.

Every morning, even on Christmas Day , the tasters to fill between 20 to 40 glasses of wine with 60ml of each of the Water samples to in of officers in the whole of Scotland.

"During our training we were using different-tasting pills, we fell into the Water and so we were able to train for our palate

"There were flavors, such as shells, rotten vegetables, onion, metallic, earthy, boiled eggs and antiseptic.

"We are not allowed to do the Tests, if we have a cold sore or a Sore Throat , and we must not eat or smoke one hour before the test.

"I have detected gasoline last week in a sample, when I sniffed it, so I didn't want to drink it. It turns out it came from a private Water supply in a hut.

"We put an exclamation mark on the cover, in these cases, and send them to the Public Health . "
