About Hirtenkäse (Allgäuer Hirtenkäse)
Hirtenkäse, or "herder's cheese", is a distinctive cow's milk cheese made in the Allgäu area of Southern Germany. Traditionally, cow herders bring their cows from the Alps into Allgäu each fall in mid-September.
