About Enyucado
Enyucado in Colombian cuisine is a cassava cake. It is made with ground boiled yuca, anise, sugar, and sometimes guava jam. Enyucado is from the Caribbean region of Colombia. In this area cassava is also eaten roasted, fried or boiled.
