Congener

In the alcoholic beverages industry, congeners are substances, other than the desired type of alcohol, ethanol, produced during fermentation. These substances include small amounts of chemicals such as methanol and other alcohols, acetone, acetaldehyde, esters, tannins, and aldehydes.
